Chef jobs in Australia for Nigerians: the 5 checks a sponsoring kitchen runs before it says yes

A Nigerian chef plates a dish in a busy commercial kitchen while a female colleague checks an order docket.

Chef jobs in Australia for Nigerians are real, but a sponsoring kitchen does not hire on talent alone. Before an Australian employer sponsors a chef from Lagos, Abuja or Port Harcourt, five things must line up: the occupation, proof of your kitchen experience, a salary above the government threshold, an English score, and a clean police and health record. Here is each check, so your papers are ready before the interview.

One rule first: it is illegal to pay an employer to sponsor you, including through salary deductions, and it can lead to visa refusal or cancellation, fines or imprisonment.

How sponsorship works for a chef

Most sponsored chefs go through the Skills in Demand visa (subclass 482). It is a temporary visa that lets an employer sponsor a suitably skilled worker for a position it cannot fill with a suitably skilled Australian. The restaurant, hotel or club nominates you; you then lodge your own visa application.

In the Core Skills stream, the worker must be nominated for an occupation on the Core Skills Occupation List (CSOL) and paid the Annual Market Salary Rate for that occupation, and never less than the Core Skills Income Threshold. Our full guide to the Skills in Demand (482) visa covers the visa itself. Here we stay in the kitchen.

Check 1: is your kitchen title an occupation they can nominate?

Nigerian kitchens use titles loosely: one hotel's sous chef is another's kitchen supervisor, and a busy eatery in Surulere may have one "chef" doing everything. Australia works from the official occupation the employer nominates, not your title.

Home Affairs publishes a combined list of eligible skilled occupations. For each occupation it shows whether it is on the CSOL, the Medium and Long-term Strategic Skills List (MLTSSL), the Short-term Skilled Occupation List (STSOL) or the Regional Occupation List (ROL), and it names the skills assessing authority. Open the combined list of eligible skilled occupations and search for both "chef" and "cook": the duties behind each are different, and so is the evidence you will need.

Check 2: can your kitchen years be proved on paper?

A subclass 482 applicant must have at least 1 year of relevant work experience in the nominated occupation or a related field, gained within the last 5 years. Part-time or casual work counts only if it adds up to at least 12 months full-time. The hard part is proof.

Many Nigerian chefs learned on the job, moved between hotels, catering and restaurants, and were paid partly in cash. Nobody can see that history unless it is written down, so build the file while former supervisors still pick your calls.

EvidenceWhat it should showTip for Nigerian kitchens
Employment reference letterYour dates, hours per week, title and actual dutiesAsk for company letterhead, a signature and a phone number that is answered; list tasks like menu costing, ordering and running a section
Payslips or bank statementsThat you were paid for the period claimedIf you were paid in cash, bank deposits in the same months help join the dots
Employment contract or appointment letterStart date and positionAsk the HR office for a copy, even if you left years ago
Qualification certificatesFormal cookery or catering trainingKeep originals safe; send clear scans, never the originals

Some primary 482 applicants must have a mandatory skills assessment, done by Trades Recognition Australia or VETASSESS depending on the occupation. It must be started before you lodge the visa application, or the application is not valid. Each assessing authority has its own procedures, timeframes and charges, so read its own page before you pay anything.

If you have years at the pass but no Australian-recognised certificate, recognition of prior learning may help. RPLDirect explains how experience can be assessed towards a Certificate III in Commercial Cookery. A certificate is not a visa; it is one piece of your file.

Our guide for Nigerian carpenters turning site work into proof shows the same paper trail from a building site.

Check 3: does the salary clear the threshold?

Before a kitchen can nominate you in the Core Skills stream, the salary must meet the Core Skills Income Threshold (CSIT). For nominations lodged from 1 July 2026 to 30 June 2027, the CSIT is AUD79,423 a year. Roughly, using the official US dollar rates of 16 October 2026, that is about N73,480,000 a year: a rough comparison only, as rates change daily.

Award rates are the legal minimum, not the visa salary. Hospitality Industry (General) Award 2020 minimums for trade-level cooks from 1 July 2026:

Award classificationKitchen titleMinimum weekly rateMinimum hourly rate
Cook (tradesperson) grade 3, Level 4Commis chef$1,119.10$29.45
Cook (tradesperson) grade 4, Level 5Demi chef$1,189.40$31.30
Cook (tradesperson) grade 5, Level 6Chef de partie$1,221.10$32.13

A sponsored chef's offer must still reach the CSIT and the market rate, whichever is higher, so a job offer quoting a bare award rate deserves questions. You can read the full award on the Fair Work Commission's Hospitality Award page.

Check 4: will your English test score pass?

For the 482 Core Skills and Specialist Skills streams, with tests taken on or after 13 September 2025, the IELTS minimum is 5.0 in each of listening, reading, writing and speaking. For PTE Academic the minimums are Listening 33, Reading 36, Writing 29 and Speaking 24.

Australian kitchens run on fast spoken English: dockets called out, allergy questions, written food safety records. A stronger score than the minimum makes the interview easier. If you are preparing for IELTS or PTE, PractiseNow lets you practise the test sections before you book.

Check 5: a clean police and health record

Home Affairs may ask for a police certificate from every country you lived in, usually if you were over 17 and lived there for at least 12 months in the past 10 years. From Nigeria that is the Police Character Certificate (PCC), issued by the Nigeria Police Force under the seal of the Inspector-General of Police. The steps are on the Nigeria Police Force character certificate page; the NPF states 5-7 working days once your documents are complete.

Cruise and offshore chefs, note: anyone who worked more than 12 months in the last 10 years on merchant ships, cruise ships, private yachts or oil rigs must also give a police certificate from the vessel's flag country plus a letter of good conduct from the captain or company.

The visa medical must be done by a Home Affairs approved panel physician, and you need a HAP ID to book it. In Nigeria the approved panel physicians are in Lagos, Abuja and Enugu; our guide to the approved Australia visa medical clinics in Nigeria lists them. Health results for the 482 are generally valid for 12 months, and police certificates are valid for 12 months from the issue date, so timing matters.

The paperwork order from your kitchen to an Australian one

Some documents expire, so order matters:

  1. Look up chef and cook on the combined occupation list and note the list status and the assessing authority for each.
  2. Collect reference letters, payslips and certificates covering at least 1 year of relevant work in the last 5 years.
  3. Write an Australian-style CV that shows sections, covers and menus you have run; Build AI CV can help you turn Nigerian job titles into clear duties.
  4. Sit IELTS or PTE so your score is ready when an offer comes.
  5. Apply to sponsored roles such as this chef job in Bunbury, WA or this chef de partie and sous chef role in Sydney, and prepare for a video interview or a cooking test.
  6. Once you have an offer and the employer confirms what the nomination needs, start any mandatory skills assessment before the visa is lodged.
  7. Request your PCC and book your panel medical close to lodgement, so neither expires while you wait.

Our checklist of documents needed to relocate to Australia from Nigeria covers the passport, birth certificate and other papers that sit alongside these steps.

What changed in 2026 for sponsored chefs

Two changes took effect on 1 July 2026. The CSIT rose from AUD76,515 to AUD79,423 for nominations lodged from that date,. And in its Annual Wage Review decision announced on 2 June 2026, the Fair Work Commission raised modern award rates by 4.75 per cent. Check that any contract uses the current figures.

Common mistakes Nigerian chefs make

  • Paying for a "sponsored chef slot". Paying an employer, or anyone acting for one, for sponsorship is illegal in Australia and puts your visa at risk. Before you trust any offer, run it through our test for a fake Australian job offer email.
  • Vague reference letters. "He worked with us as a chef" proves nothing. Letters need dates, weekly hours and the real duties.
  • Calling yourself a head chef when you ran a section. Your claimed title should match your evidence, or an assessor may reject it.
  • Getting the PCC too early. It is valid for 12 months; one done long before an offer may expire before the visa is decided.

Frequently asked questions

Can a Nigerian chef get visa sponsorship in Australia?

Yes, if an Australian employer offers a role it can nominate and you meet the visa requirements. The usual route is the Skills in Demand visa (subclass 482). Check the combined occupation list for the chef or cook occupation's list status before you apply.

How much experience do I need to japa as a chef?

The 482 visa asks for at least 1 year of relevant work experience in the nominated occupation or a related field within the last 5 years. Part-time or casual work must add up to 12 months full-time. Your employer may ask for more, so read each job ad closely.

Do I need a chef skills assessment for Australia?

Some 482 applicants must have a mandatory skills assessment, by Trades Recognition Australia or VETASSESS depending on the occupation. If it is required, it must be started before you lodge the visa application. The combined occupation list names the assessing authority for each occupation.

What IELTS score does a sponsored chef need?

For 482 Core Skills applicants with tests taken on or after 13 September 2025, the IELTS minimum is 5.0 in each of listening, reading, writing and speaking. PTE Academic is also accepted, with its own minimum score for each section.

Where do Nigerians do the Australian visa medical?

Only Home Affairs approved panel physicians can do it, and you need a HAP ID to book. In Nigeria they are in Lagos, Abuja and Enugu. Results for the 482 are generally valid for 12 months, so plan the timing around your lodgement.

Key takeaways

  • Sponsored chef jobs go through the employer: never pay anyone for sponsorship.
  • Check chef and cook on the combined occupation list, including the assessing authority.
  • Prove at least 1 year of relevant work in the last 5 years with letters and payslips.
  • The CSIT is AUD79,423 from 1 July 2026; award rates are a floor, not the visa salary.
  • Time your PCC and panel medical close to lodgement, as both last about 12 months.
