This is a serious leadership step for a chef who already knows pressure. A high-volume restaurant and pub in Sydney, NSW wants a Sous Chef to act as the Head Chef's deputy, run the kitchen in their absence and develop a young, driven team.
Expect accountability. You will own ordering, staffing and food safety, supervise every plate that leaves the pass, and help hold food and labour spending to budget alongside management. Menu input is expected too, built on seasonal local produce. The employer states a route to sponsorship for the right candidate.

Key Responsibilities
- Contribute costed, seasonal menus that make the most of local produce
- Direct ordering, staffing and food safety as part of daily kitchen operations
- Lead the kitchen in the Head Chef's absence and back them up when present
- Supervise food preparation and presentation to the venue's quality standards
- Run high-volume services efficiently while keeping labour, product and operating expenses within budget under the Head Chef and management
- Evaluate consistency of food and product delivery, adjust it, and develop the team through training
Requirements & Eligibility
- Proven Sous Chef experience in a comparable high-volume restaurant or pub
- Capability to help the Head Chef manage and monitor food and labour budgets
- Effective leadership, with the ability to train and mentor staff
- Demonstrated record of high, consistent food standards under HACCP procedures
