This is a senior kitchen post for a chef ready to manage, not just cook. A premium waterfront dining venue near Nelson, New Zealand is hiring a Sous Chef, also called Assistant Kitchen Manager, who reports to the Head Chef - Kitchen Manager and deputises with full authority.
The work is permanent at a minimum of 30 hours each week, and the roster covers weekends and public holidays. Expect to own menu costing, kitchen budgets, stock control and the team's rosters and training.

Key Responsibilities
- Run the kitchen daily together with the Head Chef
- Take complete charge when the Head Chef is not on site
- Plan and produce menus and specials
- Cost every dish for the required gross profit
- Recruit below management level, train staff, set rosters and manage performance
- Meet budget for cost of goods, wage cost and gross profit
- Buy stock and deal with suppliers within budget, keeping stock accurate and waste minimal
- Maintain food safety, the Food Control Plan and documented kitchen systems
Requirements & Eligibility
- Level 5 National Diploma in Hospitality (Kitchen Management)
- Minimum of 3 years in kitchen management
- Strong budgeting and costing skills
- Excellent organisation and time management
- Outstanding knowledge of local and international food and beverage, with IT and cloud-based software skills (email, Word and Excel)
- Right to work in New Zealand
