This is a senior kitchen role for a chef who is ready to take full control. A hotel in Brisbane is hiring a Head Chef to run its kitchen, write its menus and deliver standout food for diners and events.
You will lead the team across bistro dining, bar meals and functions, and that functions side is expanding. Expect big days such as celebrations, sporting lunches and charity events, and a firm expectation that quality, consistency and profit go together. The hotel states that sponsorship is available for the right candidate.

Key Responsibilities
- Take charge of the chefs and kitchen attendants, mentoring them and setting a professional, positive standard
- Build modern Australian menus for bistro, bar and events, cost them properly and keep presentation consistent
- Drive event catering with the functions team, organising prep, staffing and service timing
- Keep purchasing, stock, food cost, kitchen labour and waste on budget
- Enforce rigorous food safety, hygiene, allergen and WHS standards and stay hands-on during service, keeping the kitchen organised and calm under pressure
Requirements & Eligibility
- Head Chef or Kitchen Manager experience backed by a strong record in hotel dining and high-volume functions or banqueting
- Strong culinary skill with sound financial judgement, able to deliver busy meal services alongside large events, communicate clearly, work practically and develop your team
- Certificate III in Commercial Cookery together with Food Safety Supervisor certification
