This is a serious baking role for someone who already knows commercial production. A busy Brisbane bakery café needs a full-time Baker to handle its daily bread, pastry and cake output and its finished cake work, including custom celebration cakes made to order.
The position is permanent at 38 hours per week, and the business is established and expanding. Expect early starts and weekend shifts on a rotating roster.

Key Responsibilities
- Plan each day's bake so the café opens fully stocked
- Assess raw material quality and weigh and measure all ingredients per production run
- Produce doughs, batters, cake mixes, pastry and fillings
- Mould and portion dough and pastry into breads, rolls, cakes, tarts and other lines, then bake them using prepared trays and tins with controlled oven temperatures and times
- Decorate cakes and pastries using icing, cream, chocolate, fondant and sugar paste, and design custom celebration cakes for customer orders
- Price, package and present finished products
- Run and clean mixers, sheeters, provers and other gear while keeping food safety, hygiene and WHS standards
- Develop recipes and products and lead the training and supervision of junior bakers and kitchen staff
Requirements & Eligibility
- Certificate III or IV in Baking or Patisserie
- Or a higher culinary arts or patisserie qualification
- At least 1 year of commercial bakery, patisserie or hotel kitchen experience as a Baker, Pastry Chef or Pastrycook
- Strong practical pastry skills
- Strong cake production and decorating skills
- Sound food safety and hygiene knowledge
- Ability to work early mornings, weekends and a rotating roster
- Desirable: fondant and custom cake design experience
- Desirable: kitchen supervision or team leadership
- Desirable: customer-facing bakery or café experience
