A premium Japanese restaurant in the ACT is hiring a Sous Chef. The kitchen combines Japanese culinary tradition with modern presentation and quality Australian ingredients.
This is a leadership role, not just a cooking job. You will take on more responsibility for kitchen performance, team leadership and service quality, working with the senior culinary team to hold standards, coordinate service, develop the team and make sure each dish meets the required quality and consistency.

Key Responsibilities
- Maintain strict food safety, hygiene and workplace safety standards
- Prepare and cook Japanese-inspired dishes that meet premium dining standards
- Check that food quality, consistency, portion control and presentation stay on point
- Assist in leading the kitchen team and managing day-to-day operations
- Run the kitchen when senior culinary management is absent
- Supervise kitchen staff, give direction during service and coordinate prep so the workflow stays efficient
- Plan menus and seasonal specials with senior chefs
- Take part in recipe development and test new dishes
- Give junior kitchen staff practical training and guidance
- Watch productivity and find ways to improve efficiency
- Handle ordering, stock management and correct food storage, monitoring stock rotation to cut waste
- Help manage food and labour costs
- Keep equipment, workstations and food prep areas properly maintained
- Keep the kitchen professional and organised
Requirements & Eligibility
- A proven track record as a Sous Chef, Junior Sous Chef or senior chef
- Background in a premium restaurant or high-volume professional kitchen
- Japanese cuisine experience strongly preferred
- Strong cooking ability and knowledge of professional kitchen procedures
- A passion for quality produce and high-standard plating
- Ability to lead, coordinate and motivate kitchen staff, including supporting junior chefs and developing team skills
- Strong food safety and hygiene knowledge
- Excellent attention to detail and consistency, with the ability to manage multiple priorities in busy service
- Strong communication and interpersonal skills
- Excellent organisational and time-management skills
- Reliable, flexible and committed
- Available to work evenings, weekends and public holidays
- Relevant culinary qualifications are desirable
- Overseas applicants must satisfy applicable Australian employment and sponsorship requirements
- Willing to relocate to the Australian Capital Territory
