Here are the facts. An Italian dining venue in Victoria with a long history needs an experienced Sous Chef. A talented Chef de Partie who is ready to step up into leadership will also be considered.

The job puts you right next to the Head Chef. You will build your leadership skills and have a genuine influence on daily operations, team development, specials and menu direction. Fresh pasta drives this kitchen, so strong pasta experience counts for a lot.

Key Responsibilities

Run the kitchen team whenever the Head Chef is away
Work alongside the Head Chef to lead and coordinate day-to-day kitchen operations
Organise and manage the daily preparation schedule
Assign duties to kitchen staff in an effective way
Supervise how fresh pasta dishes are prepared and served
Hold food preparation and plating to one consistent standard
Watch workflow and service closely through peak periods
Take part in recruiting junior staff
Train junior staff and support their development
Bring creative input to specials and menu development
Cover several kitchen sections as required
Handle stock and ingredients efficiently
Keep the kitchen clean, safe and properly organised

Requirements & Eligibility

Strong hands-on ability in fresh pasta preparation
Either 2–3 years working as a Sous Chef, or clear proof that you are ready to move up from a senior Chef de Partie role
A track record of supervising or supporting junior chefs
Strong leadership skills
Strong communication skills
The ability to keep a fast-paced kitchen under control
Good organisation and delegation skills
A highly reliable and professional attitude
Real commitment to food quality and consistency
