Restaurant Manager

A premium farm-to-table fine dining venue in Victoria needs a restaurant leader with a verifiable record of exceptional service and high-performing front-of-house management.
Here is what the employer is looking for: an established professional whose experience, qualifications and leadership can be checked, and who brings trusted expertise, refined service standards and firm operational discipline. Sponsorship is part of the picture, but it is not the main focus.
In this role you will shape the guest experience, develop the front-of-house team and protect the operating standards of a premium dining venue. Be prepared to back up everything in your application with evidence.
Key Responsibilities
- Enforce workplace health and safety, food safety, hygiene and responsible service standards without exception
- Make sure licensing requirements, venue procedures and applicable regulations are always followed
- Take charge of front-of-house service, leading actively on the floor and holding high standards on every shift
- Define what refined, professional and attentive guest service looks like
- Oversee bookings, seating plans, guest preferences, VIP arrangements and special requests, staying in strong communication with guests throughout their meal
- Brief the team before service on operational priorities
- Train, coach and mentor front-of-house staff and coordinate closely with the kitchen for seamless operations
- Draw up the weekly roster to match events, bookings, operational requirements and seasonal demand
- Keep an eye on labour performance and assist with workforce planning
- Control front-of-house and beverage stock, arrange purchasing, and check breakage, stock usage and wastage so costs stay under control
- Run operational systems properly, produce accurate daily reports and act on chances to lift guest satisfaction, efficiency and consistency of service
Requirements & Eligibility
- Must have demonstrated experience as a Restaurant Manager, Assistant Restaurant Manager, Maître d' or senior front-of-house leader
- Strong background working in premium restaurants, fine dining or other high-standard hospitality environments
- Highly desirable: international hospitality experience
- Proven ability to lead and develop front-of-house teams
- Clear understanding of how a restaurant operates, including cost management, stock control and labour planning
- Confident knowledge of wine, with experience presenting or explaining international wine selections
- WSET qualification at minimum is required
- Excellent English communication skills
- Additional European language skills are advantageous
- A composed, professional manner in team leadership and guest service, with strong attention to detail and commitment to premium hospitality standards
- Able to provide evidence of relevant employment history, qualifications and professional experience so they can be verified
