This is a Head Chef role in Cairns, Queensland, for a chef who already has leadership experience and wants to prove it in a demanding modern kitchen.

What the job involves: setting the culinary direction, driving team performance and holding day-to-day standards in a premium hospitality setting. To be considered, you need genuine experience in kitchen management, high-volume service and menu development, as well as modern Japanese or Asian-inspired cuisine.

Key Responsibilities

Run daily kitchen operations and answer for how the kitchen performs
Monitor food costs, stock levels and budgets; handle ordering and manage supplier relationships
Enforce food safety, hygiene and compliance standards in the workplace
Lead the team, coach staff and build their skills while keeping everyone positive and accountable
Plan modern seasonal menus and roll them out
Use Japanese culinary techniques and Asian-inspired flavours when appropriate
Coordinate food preparation and service in a high-volume setting
Check that every dish meets agreed standards for taste, quality and presentation, every time
Find ways to improve kitchen systems and efficiency

Requirements & Eligibility

A Head Chef or Senior Sous Chef background, with proven experience in the role
Work history you can demonstrate in a premium, high-end or modern kitchen
Strong evidence that you have led a kitchen and supervised a team
Highly desirable: experience in Japanese, Asian or fusion cuisine
Menu development experience, including seasonal food concepts
Strong food safety and hygiene knowledge
Experience controlling food costs, managing stock and overseeing kitchen operations
Strong skills in communication and in developing a team
Ability to stay effective through busy service periods while paying a high level of attention to detail and presentation
Employment and experience documentation must support your professional experience
