This is a senior role with real weight. A newly established premium Italian restaurant in New South Wales wants a General Manager to turn a new venue into a fully structured, high-performing operation.
You will not just maintain an established restaurant; you will define how this venue operates from the start. That means building the FOH structure, recruiting the opening team, implementing systems, controlling costs and maintaining exceptional service standards, with significant responsibility across the entire operation.

Key Responsibilities
- Run large FOH and bar crews during every service
- Drive all pre-opening work and operational readiness, setting up practical FOH structures, floor plans and service workflows
- Build the opening team, hiring people who can perform at a high level
- Interview, onboard and train new hospitality staff, then keep developing them
- Spell out service expectations and performance standards, and coach managers and staff towards a consistent service culture
- Write SOPs and day-to-day operating procedures, and run opening and closing systems venue-wide
- Draw up rosters and track staffing requirements
- Keep wage costs, labour spending and productivity under tight control
- Run the restaurant POS and operational systems, Deputy included
- Take responsibility for premium wine, spirits and cocktail operations
- Watch beverage costs, GP, pricing and margins closely
- Handle purchasing and supplier relationships, and negotiate in support of commercial outcomes
- Check guest experience, service quality and operational results
- Make sure the venue meets RSA, WHS and restaurant compliance requirements
- Find operational gaps and fix them with effective solutions
- Be hands-on during service without losing commercial oversight
Requirements & Eligibility
- A history of venues managed, launched or operationally led that can be verified
- Strong track record at senior level in restaurant or hospitality management
- Has managed premium or high-volume restaurant operations
- Has opened or established a new hospitality venue, and can demonstrate it
- Has managed substantial FOH and bar teams, backed by strong recruitment, staff training and leadership experience
- Practical, hands-on grasp of restaurant floor operations
- Strong knowledge of beverage service, including wine, spirits and cocktails
- Has managed beverage GP, costing, pricing and margins
- Hands-on with rosters, labour budgets and wage control, as well as POS and restaurant management platforms
- Strong experience negotiating with suppliers and handling purchasing
- Sound grasp of RSA, WHS and restaurant compliance
- Can develop systems and procedures from scratch
- Strong commercial awareness and solid operational decision-making
- Can demonstrate previous hospitality leadership through a credible career history
