Position: Sous Chef with a reputable hospitality business in Queensland, Australia. The employer wants proven kitchen capability, dependable leadership and a firm commitment to quality.
This is a step up for a chef ready to carry more responsibility in a professional kitchen. You will work alongside the Head Chef to coordinate kitchen activities, support the culinary team, maintain food standards and help develop the venue's food operations.
Your practical experience, trade qualifications, leadership skills and consistency during busy service will decide whether you are a strong fit. Be ready to back up what you claim with evidence.
Key Responsibilities
- Maintain HACCP, food safety, hygiene and workplace safety procedures, ensuring all food is stored, prepared and handled to the required standards
- Support the Head Chef with daily kitchen operations and step in to run the kitchen when the Head Chef is absent
- Coordinate preparation and service to keep the workflow efficient
- Lead and supervise the kitchen team during busy periods, allocating responsibilities clearly
- Hold consistent standards for quality, presentation, flavour and portion control
- Assist with menu planning and seasonal offerings, and put forward creative ideas for specials and improvements
- Monitor stock, assist with purchasing and supplier orders, control food costs and minimise waste
- Train, guide and mentor less experienced kitchen staff
- Check cleanliness, organisation and equipment practices across the kitchen
- Collaborate with management and front-of-house personnel and help keep the team respectful, accountable and professional
Requirements & Eligibility
- Australian working rights, or eligibility for employer sponsorship
- Sponsorship available for a suitable and verified candidate
- Ability to produce evidence that supports your qualifications and professional experience
- A formal qualification in Commercial Cookery is needed
- Track record as a Sous Chef, Senior Chef or comparable senior kitchen professional
- Solid grounding in commercial or hospitality kitchen operations
- Demonstrated experience in leading and supervising kitchen teams
- Ability to run high-volume service periods with confidence, staying calm and organised under pressure
- Strong hands-on knowledge of food preparation and presentation
- Understanding of HACCP, food hygiene and food safety requirements
- Strong organisational, time management, communication and leadership skills
- A reliable, proactive and hands-on approach, with a firm commitment to quality and consistency
- Willingness to take responsibility and contribute to continuous improvement
