This is a role for a hands-on Indian Chef with real experience. An established hospitality employer in Victoria needs someone strong in Hyderabadi Dum Biryani, Tandoor cooking and South Indian tiffins.

The job goes beyond recipes. Expect to manage quality, control costs, support the team and be accountable for the food served, while helping kitchen operations stay efficient and developing the people around you.

Key Responsibilities

  • Supervise kitchen staff, and train and guide junior members of the team
  • Make sure food safety and hygiene rules are always followed and that the kitchen complies with food-handling and workplace regulations
  • Take charge of how Indian dishes are prepared and the quality they reach
  • Produce Hyderabadi Dum Biryani with authentic methods and set recipes, along with Tandoor dishes and South Indian tiffins
  • Contribute to menu development and keep recipes consistent
  • Run daily mise en place and food preparation
  • Inspect delivered ingredients and monitor food quality
  • Control cooking temperatures and manage kitchen equipment
  • Support ordering, portion control and food costing, and keep storage and stock rotation efficient
  • Prepare meals that meet customers' allergy and dietary requirements
  • Keep the kitchen clean and operations organised

Requirements & Eligibility

  • Minimum 1 year of industry experience that is relevant to this role
  • Previous work as a Chef or Sous Chef, or in an equivalent position
  • Commercial cookery certification or a relevant culinary trade qualification
  • Proven ability in Hyderabadi Dum Biryani production and practical Tandoor cooking
  • Experience cooking South Indian tiffins and authentic Indian dishes
  • Experience with food cost management, portion control, kitchen ordering and stock management
  • Able to schedule, supervise or train kitchen staff, backed by strong team leadership and communication
  • A current Food Safety Supervisor certification is highly regarded
  • Able to work independently and take ownership, with a reliable and proactive approach to kitchen operations
  • Strong organisation and problem-solving skills
