This is a senior culinary leadership role with a well-established hospitality group in Sydney, and the scale is serious: seven food and beverage outlets, a kitchen workforce of more than 60 and production exceeding 12,000 meals per week.

Technical cooking ability is only the starting point. The group needs someone with a proven record of leading large-scale kitchen operations across multiple venues, including team leadership, commercial decision-making, operational control and consistent delivery.

Key Responsibilities

  • Direct kitchen operations at seven food and beverage outlets, leading, supervising and developing more than 60 kitchen employees
  • Recruit and grow kitchen professionals at all levels
  • Drive menu development and coordinate its rollout across multiple operations
  • Keep food quality, presentation and service the same at every venue
  • Control food costs, labour spend, purchasing and inventory, watching budgets and contributing to profitability
  • Put effective kitchen systems, procedures and performance standards in place
  • Monitor compliance with food safety, workplace health and safety and regulatory requirements
  • Partner with venue managers and senior leadership on operational targets, finding practical gains in productivity, workflow and cost management
  • Hold high standards in a large-scale, fast-paced environment and support a positive, accountable kitchen culture

Requirements & Eligibility

  • Proven experience in a Group Executive Chef, Executive Chef or equivalent senior culinary role
  • Demonstrated responsibility for large kitchen teams, complex operations and high-volume food production
  • Strong knowledge of food costing, budgeting, labour control and purchasing, backed by a commercial understanding of kitchen profitability
  • Menu development experience and a record of maintaining consistent food standards
  • Proven ability to recruit, train, mentor and retain kitchen staff, with strong organisational, communication and people-management skills
  • Can lead strategically and stay hands-on when required
  • Multi-venue hotel or hospitality experience is highly regarded, and international recruitment or sponsorship experience is advantageous
  • Knowledge of food safety, workplace health and safety and regulatory requirements
  • Verifiable evidence of relevant employment experience and senior responsibilities
