The work ranges from precise sushi preparation to fast hot kitchen service. You need a strong understanding of Japanese cuisine, an eye for detail and the discipline to keep quality high when the kitchen is under pressure. Key Responsibilities

  • Keep up speed and accuracy through high-volume service
  • Prepare authentic Japanese dishes with consistent results and strong presentation
  • Produce sushi and sashimi with professional knife and preparation technique, and prepare seafood and the cold-section mise en place
  • Run Japanese hot dishes across the grill, fryer, pan and yakitori sections
  • Select and handle ingredients to professional kitchen standards, with precise portions and consistent plating
  • Finish the daily prep list before service
  • Manage food storage, freshness and stock rotation correctly
  • Comply with food safety, hygiene and sanitation requirements at all times and keep work areas clean, organised and service-ready
  • Coordinate with fellow kitchen staff for smooth service and support the wider team's daily operational needs
  • Adapt to different sections and operational requirements as needed
  • Hold yourself to professional standards, discipline and attention to detail

Requirements & Eligibility

  • Overseas candidates may be considered for 482 visa sponsorship where they meet the eligibility requirements
  • Candidates who have full Australian working rights are also welcome to apply
  • Minimum 3 years in professional Japanese cuisine
  • Employment history in Japanese restaurants, sushi establishments, izakaya or similar commercial kitchens that can be proven
  • Practical skills in sushi, sashimi or Japanese hot food preparation that you can demonstrate
  • Strong knife work and seafood handling experience
  • Ability to show genuine hands-on culinary experience relevant to this position
  • Experience in a fast-paced professional kitchen and the ability to hold quality and consistency through busy services
  • Solid understanding of food safety, hygiene and professional kitchen practice
  • Punctual, reliable and professional
  • Strong communicator who works well within a kitchen team
  • Ability to supply appropriate evidence supporting your professional experience and culinary skills
