This is a senior kitchen leadership role, not an entry-level cooking job. An established premium hospitality operation in Victoria, Australia is hiring an accomplished Senior Chef.

The right person has moved past purely hands-on cooking and can prove they lead people well, keep standards exceptional and help set the direction of a professional kitchen. Attention to detail, consistency and technical excellence are essential in the experienced team you will join.

Selection weighs your professional background, qualifications and career achievements. Candidates who clearly demonstrate experience in high-end culinary settings get preference, and work in Michelin-starred or comparable international fine-dining kitchens is highly regarded. Be honest about your record, as evidence will be required.

Key Responsibilities

  • Uphold food safety, hygiene and workplace health standards consistently
  • Lead the kitchen team through prep and service, monitoring food preparation and cooking all through service
  • Supervise junior and commis chefs, and coach, train and mentor developing chefs on an ongoing, practical basis
  • Hold food quality, presentation and consistency to exceptional standards
  • Support the Head Chef in daily kitchen operations
  • Assist with menu planning, recipe development, culinary innovation and the rollout of new dishes
  • Make sure all team members follow kitchen procedures consistently
  • Handle ingredient ordering, stock levels and rotation, and help with food costing and control of kitchen resources
  • Keep accurate records for operations and compliance
  • Coordinate with front-of-house staff while service is running
  • Identify ways to improve culinary standards and kitchen efficiency
  • Lead by example, keeping the kitchen disciplined, respectful and professional

Requirements & Eligibility

  • Currently working in Australia on a valid visa
  • Minimum of 5–7 years in professional kitchens
  • Minimum of 2–3 years' experience in a supervisory, sous chef or senior chef capacity
  • Proven experience in high-end culinary environments: fine dining, Michelin-starred or equivalent
  • Demonstrated career progression with growing professional responsibility
  • Strong technical culinary skills across contemporary cooking methods, plus an understanding of contemporary food trends and sustainable kitchen practices
  • Proven leadership and team-development ability, including training, mentoring and motivating kitchen staff
  • Strong knowledge of kitchen compliance, hygiene and food safety
  • Excellent organisational and communication skills
  • Able to stay composed and keep high standards when services get demanding
  • Experience with inventory management, kitchen costing and stock control
  • Relevant culinary qualification, apprenticeship or equivalent professional training preferred
  • Strong commitment to consistency, quality and continuous improvement
  • Able to provide appropriate evidence of your qualifications and professional experience
