Job title: Chef. Level: Sous Chef or senior culinary professional. Location: Eden, on the New South Wales South Coast.

Cooking well is only part of it; you also have to stay consistent, lead people, keep the kitchen organised and step forward when things get tough during service. At this professional hospitality operation you will push daily kitchen performance, back up the senior chefs and drive the team to put out excellent food and service.

Key Responsibilities
- Take charge of kitchen operations whenever the senior chefs are absent
- Run and coordinate the kitchen during daily service, directing and guiding staff through the busy rushes
- Cook to the agreed quality and presentation standards and organise plating so dishes leave on time
- Teach team members kitchen procedures, food preparation and how to work safely
- Enforce strict food safety, hygiene and HACCP standards; keep work areas clean, tidy and compliant with health rules
- Watch stock levels and plan food preparation around operational needs; assist with inventory, food costing and cutting waste
- Inspect food for quality, consistency and presentation before service
- Back the senior chefs on menu planning and kitchen preparation, and help bring new and seasonal menu items to life
- Maintain kitchen equipment and report any maintenance needs
- Talk with front-of-house staff so service flows efficiently
- Find ways to make the kitchen run faster and the food better
Requirements & Eligibility
- At least 2 years' experience working as a Sous Chef, Senior Chef or equivalent
- Professional culinary experience you can prove, which can be independently verified
- Relevant culinary qualification or apprenticeship, or minimum Certificate III in Commercial Cookery or equivalent
- Strong hands-on grasp of commercial cooking techniques and food preparation, and you know food safety, hygiene and HACCP requirements
- Valid NSW Food Safety Certificate, plus current food handling certification
- Proven history of leading or supervising kitchen personnel
- Keeps food quality consistent even when pressure is high
- Strong at planning, organising and managing time; experienced with stock control, food costs and minimising kitchen wastage
- Strong communicator and team worker with a professional attitude and genuine commitment to culinary standards
- Able to work full-time in New South Wales
