Chef de Partie

This is a Chef de Partie role in a professional hotel kitchen in Queensland, and it calls for real commercial kitchen experience. You need to be able to own your section and deliver reliable results when the pressure is on.
The work covers restaurant dining, conferences, functions and events. Your practical skills, qualifications and employment history will be used to judge whether you suit the role, and extra responsibility is earned through what you demonstrate on the job.
A proven Chef de Partie with the required technical ability, leadership and consistency may have the opportunity to step up to a Junior Sous Chef position.
Key Responsibilities
- Follow workplace health and safety procedures and keep food hygiene, safety and cleanliness standards high
- Run your assigned section independently, from daily planning through to mise en place
- Prepare and cook dishes to set quality and presentation standards
- Deliver the same standard across restaurant, event and function services
- Contribute to conference and high-volume food service
- Control portion sizes, use ingredients efficiently, assist with stock rotation and limit food wastage
- Work closely with senior chefs and the kitchen team while supporting junior staff and a positive atmosphere
- Keep organised and effective through busy service periods
- Take on further responsibilities as your capability is demonstrated
- Support lunch, dinner, events and other operational requirements
- Help keep the wider kitchen operation running smoothly
Requirements & Eligibility
- A Certificate III in Commercial Cookery, or an equivalent qualification
- Proven experience as a Chef de Partie, or equivalent experience as a commercial kitchen professional
- Ability to manage and operate a kitchen section independently, backed by demonstrated practical cooking and food preparation skills
- Commercial kitchen experience covering varied service environments
- Sound understanding of WHS requirements, food safety and hygiene
- Ability to hold quality and consistency under pressure
- Strong communication and teamwork, with a reliable, professional approach to kitchen duties
- Available to work evenings, weekends and public holidays as required
- Experience in leadership or supervision is advantageous
- Australian work rights where applicable; candidates requiring sponsorship may be considered according to individual eligibility
- Ability to provide appropriate evidence for your qualifications and relevant work experience
- Commitment to professional development and career progression, and willingness to accept greater responsibility as performance is proven
