Several permanent kitchen roles are open with a busy, long-standing hospitality business in Queensland, Australia. The employer needs Indian Curry Chefs/Cooks, Tandoori Chefs/Cooks and Indian Cuisine Sous Chefs who already have real experience with Indian cuisine.
The work is fast-paced. You will be expected to produce authentic Indian food and hold firm standards on food quality, presentation and kitchen operations. Sponsorship is on offer for suitably qualified overseas candidates who satisfy Australian visa requirements.

Key Responsibilities
- Plan daily and weekly kitchen output in partnership with management, and contribute menu ideas that take food and labour costs into account
- Produce authentic Indian dishes from scratch, covering curries, tandoori items, sauces, breads, rice, entrees and desserts
- Run and look after the traditional tandoori ovens where the kitchen uses them
- Plate every dish to the agreed recipe, portion size and presentation standard, and check that quality does not slip during service
- Examine all ingredients for freshness and quality before they go into a dish
- Control stock levels and keep food waste low
- Keep food in temperature-controlled storage so it remains safe to serve
- Enforce strict hygiene, cleanliness and safety rules, and keep equipment and every workstation spotless
- Lead, train and back up junior kitchen staff when required, and deal professionally with food quality complaints and customer feedback
- Show solid organisation and time management while working quickly in a high-pressure commercial kitchen
Requirements & Eligibility
- Experience as an Indian Curry Chef, Tandoori Chef, Indian Cook or Sous Chef, with a minimum of three years spent preparing authentic Indian cuisine
- Relevant Commercial Cookery or Hospitality qualification that suits the position
- In-depth knowledge of traditional Indian cooking techniques and genuine recipes
- Capacity to work efficiently in a high-volume, fast-paced kitchen
- Excellent organisational and communication skills, plus the ability to supervise and train junior kitchen staff where required
- Firm commitment to food safety, hygiene and workplace health and safety standards
- Overseas applicants are required to hold a positive skills assessment
- Overseas applicants are required to have an IELTS score of 5.5 or 6.0 in each module, or an equivalent PTE score
