Full-Time Butcher wanted for an established meat and poultry operation in Ascot Vale, Melbourne VIC. You need to be confident across commercial meat preparation and retail production.

Key Responsibilities

Follow food safety, hygiene and workplace safety procedures at all times
Clean and maintain knives, equipment and preparation areas so the workplace stays clean, organised and compliant
Break down carcasses across different meat types, then cut, trim, grind and portion accurately
Produce sausages and other processed products, seasoning, smoking and marinating meat where required
Operate slicers, grinders and other processing machinery
Present meat to gourmet retail standards
Weigh, package, price and label products accurately, and keep retail displays attractive
Inspect meat and finished goods for quality and consistency
Fill customer orders accurately and efficiently
Monitor stock levels, support inventory management and keep production, stock and inventory records

Requirements & Eligibility

A minimum 3 years of relevant professional experience
Certificate III in Meat Processing or another relevant qualification
Demonstrated carcass breakdown experience, with strong commercial knife and meat-cutting skills
Background in producing sausages and other meat products
Competent on slicers and meat-processing equipment
Sound food safety and hygiene knowledge, and an understanding of workplace health and safety requirements
Stock and inventory management experience, plus the ability to follow customer specifications and order requirements
Strong focus on quality, accuracy and presentation
Ability to show industry experience that is genuine, relevant and verifiable
