Breakfast Sous Chef

A growing hospitality business in New South Wales wants an experienced Breakfast Sous Chef to own its morning kitchen and work alongside the Head Chef.

What is on offer, as stated by the employer: $80,000 + superannuation, a permanent full-time contract, 38 hours across five days and two consecutive days off each week. Starts are approximately 6:00am, so you finish earlier in the day. You will develop the breakfast menu, lead a small team, improve kitchen systems and keep morning service smooth, all in a coastal region of NSW.

Key Responsibilities

  • Enforce cleanliness, hygiene and food safety standards
  • Control wastage, rotation, ordering and stock levels
  • Run the breakfast kitchen from day to day
  • Lead the team through breakfast prep and service while keeping standards high
  • Coordinate with the Head Chef on how the kitchen operates and where the food is heading
  • Oversee and back up as many as five breakfast chefs
  • Coach junior kitchen staff and help them develop
  • Help build new breakfast menus and seasonal specials and refine existing ones
  • Make sure portion control, presentation and food quality stay consistent
  • Plan each day's prep so every bit of mise en place is finished
  • Keep things moving efficiently when breakfast gets busy, and pinpoint where processes and systems can improve
  • Lend support to the wider kitchen team when operations demand it
  • Keep the kitchen culture professional, motivated and respectful

Requirements & Eligibility

  • Commitment to building a long-term career in the Australian hospitality industry (sponsorship available for the successful candidate)
  • Minimum 2–5 years' experience working as a Sous Chef or in a senior chef role
  • Has demonstrated experience in brunch or breakfast-focused kitchens and strong knowledge of café-style and modern Australian breakfast cuisine
  • Has supervised or led a kitchen team before and can mentor, motivate and train junior chefs
  • Strong skills in presenting and preparing food
  • Good knowledge of kitchen hygiene and food safety, plus experience in minimising food wastage, ordering and stock control
  • Strong leadership, communication, time-management and organisational skills
  • Delivers effectively when service periods are busy
  • Comfortable starting work on early morning shifts
  • Team-oriented, reliable and professional
